Product Description
Dextranase is also named α-glucanase, produced by submerged fermentation of Aspergillus oryzae followed by purification and formulation. The enzyme hydrolyzes the α-1, 6-glucosidic bonds in the dextran molecule.
Mechanism
Dextranase is a hydrolase for specifically splitting α-1, 6-glucosidic linkages in the dextran molecule, producing mainly isomaltose, isomalto-oligosaccharides, and glucose.
During sugar processing, Leuconostoc, Mesenteroides, Streptococcus, and other microorganisms are commonly found as contaminants, leading to the generation of high molecular viscous dextran, which presents difficulties in processing, resulting in yield loss and sugar quality problems. Dextranase helps a lot to overcome these problems by getting rid of the dextran.
