Designed for High Fructose Syrup Manufacturing
This glucose isomerase is produced through microbial fermentation, ultrafiltration, and immobilization processes to achieve high purity and stable catalytic performance. It can catalyze the conversion of glucose to fructose and also catalyze the conversion of xylose to xylulose in wood-sugar systems. The enzyme is suitable for both glucose isomerization and xylose isomerization, enabling the production of sweeteners with different functional properties and flavor profiles.

- Magnesium Ion Requirement: Mg²⁺ acts as an activator; dosage depends on syrup purity.
When Mg²⁺ content in syrup is ≤1 ppm, additional Mg²⁺ is recommended (typical dosage around 45 ppm). - Conversion Efficiency: Each kilogram of immobilized glucose isomerase can produce
approximately 7–10 tons of fructose syrup.
Mode of Action
Glucose isomerase, also known as xylose isomerase, catalyzes the reversible structural conversion between alpha-D-glucose and beta-D-fructose. It can also catalyze the conversion of xylose to xylulose. In the food processing industry, the enzyme is mainly used to increase fructose content, producing sweeter fructose molecules for large-scale high fructose syrup manufacturing.
