Using Effects
Gelatin Hydrolase is a digestive enzyme, which can resolve protein coagulated by gastric action into peptone but not further into amino acid. Its digestion is the highest when hydrochloric acid amount only reaches 0.2%-0.4% (pH=1.6-1.8). Therefore, Gelatin Hydrolase is usually combined with dilute hydrochloric acid. Gelatin Hydrolase is widely used in food processing applications:
- Gelatin production and protein hydrolysis
- Food-grade enzymatic preparations
- Protein clarification in beverage manufacturing
