β-Glucanase is a group of biological enzymes extracted by deep fermentation of selected Aspergillus niger strains, followed by microfiltration, ultrafiltration, and vacuum freeze-drying technology, mainly used in beer, brewing, feed, and other industries.
β-Glucanase is an enzyme system specialized in the decomposition of glucose polymers linked by β-glucosidic bonds, mainly the 1,3-1,4 glycosidic bonds of β-glucan, producing 3-5 glucose units of oligosaccharides and glucose, which can effectively decompose β-glucan in the cell wall of endosperm of wheat and cereals.
It is soluble in water, and the aqueous solution is beige liquid.
