The product is a plant protease preparation extracted and purified from the skin, flesh, or/and stem of the pineapple. It catalyzes the hydrolysis of protein into low molecular peptides and amino acids, which can be used in the food industry, feed production, and cosmetic industry.

Introduction

Bromelain is a thiol proteinase, i.e., it contains in the active center highly reactive cysteine groups that are essential for its function. This enzyme hydrolyzes high molecular proteins into easily absorbable small peptides and amino acids.

Food Industry

  • Baking: It can be added into dough to modify the gluten network and soften the dough, and thus improves sensory properties of biscuits and bread.
