Bromelain Description

Bromelain enzyme is a mercaptohydrolase from pineapple, which is a food-grade enzyme produced by modern biotechnology with refining, purifying, concentration, and drying. Its molecular weight is 33 000 and isoelectric point is 9.55. The active center of bromelain is sulfhydryl (-SH). It mainly comes from plant stem, so it is also called stem bromelain.
