Used across the dairy industry for production of lactose-free and reduced-lactose milk, UHT milk, yogurt, ice cream and whey beverages. In milk standardization and sweetness optimization, lactase enzyme powder supports in-tank hydrolysis to increase monosaccharide content and improve perceived sweetness without added sugar. High-activity grades (50,000–100,000 ALU/g) are suited for low-dosage, high-throughput processing, while 10,000 ALU/g powder and liquid lactase formats are commonly applied in smaller batch operations and pilot plants. Bulk lactase is also used in whey processing to improve fermentability and downstream drying efficiency.

Active component: Lactase (β-Galactosidase), CAS No. 9031-11-2. Available as food grade powder (10,000 ALU/g, 50,000 ALU/g, 100,000 ALU/g) and food grade liquid; selected grades produced by submerged fermentation of Bacillus licheniformis and standardized by HPLC and activity assay. Supplied in sealed bags, bottles, or foil packaging with typical 1 kg and bulk formats, suitable for scale-up in dairy manufacturing environments and compliant with food processing use requirements.
