In bread and flour applications, lipase and phospholipase preparations improve dough stability, gluten strength, crumb structure and loaf volume while reducing reliance on chemical emulsifiers. In animal feed, lipase supports fat digestibility and feed conversion efficiency, particularly in poultry and swine diets. Industrial alkaline and acid lipases are applied in detergent formulations for fat stain removal, in paper mills to control pitch and stickies from OCC and recycled fiber and in leather degreasing to improve fat removal and processing consistency.
