This product is produced through submerged liquid fermentation using a carefully selected strain of Aspergillus niger. It functions effectively under low pH conditions, catalyzing the hydrolysis of proteins by breaking peptide bonds within protein molecules and converting them into peptides and amino acids.

Acid Protease is a high-activity liquid protease designed to hydrolyze proteins efficiently under acidic conditions. With an activity of 100,000 U/ml, this food-grade enzyme breaks complex
proteins into smaller peptides and amino acids, improving fermentation performance, enhancing flavor development, and optimizing process efficiency. Supplied as a dark brown, flowable liquid, it disperses easily in water or processing media and is ideal for low-pH processes such as alcoholic fermentation, vinegar production, soy sauce brewing, flavor manufacturing, tobacco processing and leather treatments.

Mode of Action
