Applications
Cellulase (EC 3.2.1.4) and xylanase are applied during milling and aqueous extraction to hydrolyze cellulose and hemicellulose in plant cell walls, improving release of polyphenols, flavonoids, saponins, and isoflavones while reducing mash viscosity. β-Glucosidase (EC 3.2.1.21) is used post-extraction to cleave β-D-glucosidic bonds, converting glycosides into aglycone forms for improved bioavailability and measurable increases in active compound yield. Pectinase (EC 3.2.1.15) supports clarification of fruit, leaf, and sugarcane extracts by degrading pectins, accelerating sedimentation and reducing filtration load. Neutral protease (EC 3.4.24.-) and medium-temperature alpha-amylase (EC 3.2.1.1) are introduced prior to filtration to hydrolyze proteins and starches, decreasing turbidity and improving filter throughput. β-Glucanase (EC 3.2.1.6) targets β-glucans in roots and cereals, lowering viscosity and enhancing solid–liquid separation efficiency.

Stock includes food-grade cellulase, pectinase (liquid activity up to 10,000 U/mL), xylanase (powder activity up to 110,000 U/g), β-glucosidase, β-glucanase, neutral protease, and medium-temperature alpha-amylase in both liquid and solid forms.
