How Catalase Works
Rapid H₂O₂ Decomposition
Catalase converts H₂O₂ → H₂O + ½O₂ with extreme speed (kcat >200,000 s⁻¹). Even trace peroxide residuals are eliminated within minutes at typical process temperatures.
Prevents Oxidative Damage
Residual hydrogen peroxide causes off-flavors in food and beverage products, inhibits fermentation yeast, and damages textile dyes. Catalase ensures complete removal before downstream processing.
Reduces Water Consumption
In textile processing, catalase eliminates residual bleaching peroxide in a single enzymatic step — replacing multiple water rinse cycles and reducing water consumption by 30–50%.
Catalase Applications by Industry
Dairy Processing
Removes residual H₂O₂ from cold-sterilized milk, cheese brine, and egg products after peroxide treatment, preventing oxidative off-flavors and ensuring food safety compliance.
Textiles
Eliminates peroxide residuals after cotton bleaching in a single enzymatic step, replacing multiple water rinses. Reduces water use by up to 50% and cuts dye inconsistency caused by peroxide carry-over.
Brewing & Fermentation
Destroys residual H₂O₂ after equipment sterilization before inoculation. Protects yeast viability and fermentation performance in wine, beer, and bioethanol production.
Food & Beverage
Used in juice, gluconic acid, and condiment processing to decompose H₂O₂ before fermentation or packaging. Compliant with food additive regulations for direct food contact applications.
Wastewater Treatment
Rapidly neutralizes hydrogen peroxide in industrial effluent before discharge, reducing oxidant load and meeting environmental discharge limits for food, textile, and pharmaceutical sites.
Catalase Applications: Process Details, Dosage & Parameters
Dairy Processing
Dairy | H₂O₂ Removal After Cold Pasteurization
Function: Cold pasteurization (H₂O₂ treatment) is used for raw milk pre-treatment in some markets, particularly where heat pasteurization is not available. Residual H₂O₂ must be completely removed before further processing. Catalase rapidly decomposes H₂O₂ to water and oxygen (2H₂O₂ → 2H₂O + O₂) without leaving any residue, meeting food safety requirements.
Typical dosage: 100–300 U/L milk; add after H₂O₂ treatment; 5–15 minutes contact time at 4–20°C; verify complete H₂O₂ removal with peroxide test strip
Applications: Raw milk cold pasteurization, cheese milk preparation, H₂O₂-treated dairy in developing markets, whey processing.

Textile Processing
Textiles | H₂O₂ Neutralization After Bleaching
Function: Cotton bleaching uses H₂O₂ at 1–5 g/L to achieve fabric whiteness. Residual H₂O₂ after bleaching must be neutralized before dyeing — if H₂O₂ is present, it oxidizes and destroys reactive dyes, causing uneven color. Catalase neutralization replaces reducing agents (sodium bisulfite, sodium thiosulfate), reducing chemical cost and effluent load.
Typical dosage: 100–500 U/L bath; 20–40°C; 10–20 minutes; pH 6–8; verify with H₂O₂ peroxidase test strip before dyeing
Applications: Cotton bleaching afterwash, hydrogen peroxide neutralization before reactive dyeing, textile mill effluent treatment.

Brewing & Fermentation
Brewing | Oxidative Stress Prevention
Function: H₂O₂ generated during mashing and fermentation causes oxidative damage to wort components and yeast cells, accelerating staling. Catalase addition protects sensitive flavor compounds and extends yeast viability during high-gravity fermentation. Also used in aeration systems to prevent H₂O₂ accumulation from enzymatic oxidation reactions.
Typical dosage: 50–200 U/L; add to wort or fermentation vessel; compatible with standard yeast pitching conditions
Applications: High-gravity lager brewing, long-lagering fermentation, yeast health maintenance, flavor-sensitive specialty beer production.
Food & Beverage Processing
Food Industry | H₂O₂-Based Preservation Systems
Function: H₂O₂ is used as a sterilant for aseptic packaging (tetra pak, PET bottles) and as a cold antimicrobial treatment for fresh-cut produce and juices. Catalase provides controlled H₂O₂ neutralization after the sterilization treatment, ensuring no residual H₂O₂ in the final product.
Typical dosage: 50–200 U/g product; 4–25°C; 5–15 minutes contact; combine with verification test for regulatory compliance
Applications: Aseptic packaging sterilization cleanup, fresh produce H₂O₂ wash treatment, juice cold preservation, food contact surface sterilization.
Wastewater Treatment
Industrial Effluent | H₂O₂ Neutralization
Function: Industrial processes using H₂O₂ (bleaching, sterilization, chemical synthesis) generate H₂O₂-containing effluent. Discharge of H₂O₂ above threshold levels (typically >1 ppm) is regulated due to aquatic toxicity. Catalase provides rapid, low-cost, environmentally clean H₂O₂ neutralization without adding reducing chemical residues.
Typical dosage: 100–500 U/L effluent; ambient temperature; 10–30 minutes contact; pH 6–9; verify with peroxide test strip
Applications: Textile mill effluent, dairy wastewater, food processing discharge, pharmaceutical manufacturing effluent, hospital waste treatment.
