Alpha-amylase cleaves internal α-1,4-glycosidic bonds in starch, rapidly reducing viscosity and producing soluble dextrins. Thermostable variants operate at 85–105°C for jet-cooking; fungal variants suit baking applications where inactivation at oven temperatures is required.
