Catalase (CAS 9001-05-2) is widely used in food and beverage processing to remove residual hydrogen peroxide after cold sterilization of milk, cheese brine, egg products and packaging materials, preventing oxidative off-flavors and ensuring regulatory compliance. In juice, wine and gluconic acid production, it eliminates excess H₂O₂ prior to fermentation or downstream processing, protecting yeast performance and improving yield. Textile processors use high-concentration liquid catalase as a peroxide killer after bleaching to shorten rinse cycles, reduce water consumption and improve dye consistency. Industrial and wastewater treatment facilities apply catalase to rapidly decompose hydrogen peroxide into water and oxygen, reducing chemical residuals and lowering treatment costs.

Available activities include 20,000–200,000 U/g (powder) and ≥400,000 U/ml (liquid), produced via submerged fermentation of selected microbial strains such as Aspergillus niger and refined by filtration and concentration. Supplied in food grade/industrial grades, in bulk powder and stabilized liquid formats suitable for dosing systems, tank reactions and full-scale production environments.
