It is also widely used in beekeeping (bee feeding syrup), invert sugar syrup production, and pharmaceutical formulations. The enzyme works by breaking down sucrose into glucose and fructose.
When invertase is mixed into a solid fondant center and coated in chocolate, the enzyme gradually converts the sucrose in the fondant into glucose and fructose over 1 to 3 weeks. Since invert sugar has a lower melting point and higher solubility than sucrose, the fondant liquefies inside the chocolate shell. This is how cherry cordials and cream-filled chocolates are made.
