Xylanase is a glycoside hydrolase that cleaves arabinoxylan — the most abundant hemicellulose in cereal crops — into soluble fragments and fermentable sugars.

Xylanase is an enzyme that hydrolyzes xylan, a hemicellulose polymer composed of xylose units linked by beta-1,4 glycosidic bonds. In cereal grains, xylan exists primarily as arabinoxylan (AX) — xylan backbone substituted with arabinose. Both soluble and insoluble arabinoxylans have important functional effects in baking, brewing, and feed.
In bread dough (pH 5–5.5), fungal xylanase (pH optimum 4.5–6.0) performs well. For whole wheat applications where dough pH can be 5.5–6.0, xylanase with broader pH tolerance (4.5–7.0) is preferred. Thermostability to 60°C is required so the enzyme is active through most of the baking temperature rise before inactivation.
Typical dosage: 0.5–5 ppm based on flour weight. Start at 1 ppm and optimize by dough extensibility (alveograph Extensibility values) and crumb structure. Over-dosage causes sticky, slack dough by over-hydrolyzing water-binding arabinoxylans. Xylanase dosage is critical — 2–3× over-dose produces noticeably inferior dough.
Xylanase alone cannot fully replace bromate — it improves extensibility but does not strengthen dough oxidatively. However, xylanase combined with glucose oxidase (dough strengthener) and ascorbic acid provides comparable performance to bromate in many applications. Enzyme combinations are the industry-standard bromate replacement for industrial pan bread.

For kraft pulp bleach boosting: 5–20 IU/g dry pulp at 50–60°C, pH 7–9 (alkaline-stable xylanase required), 60–120 minutes. This reduces ECF bleach chemical (ClO₂) demand by 15–25%. Alkaline stability (active at pH 7–10) is the critical specification for pulp applications — most baking xylanases are acid-active and unsuitable.
