Invertase
Sucrase is also called “invertase”. One of the glycosidases, invertase (β-D-fructofuranoside fructohydrolase) (EC.3.2.1.26) specifically catalyzes the hydrolysis of β-D-fructofuranoside bonds in non-reducing sugars. It can not only catalyze the hydrolysis of sucrose to produce glucose and fructose, but also catalyze the hydrolysis of raffinose to produce dendriose and fructose.
Function & Application
Sukrose katalyseres av sukrase og hydrolyseres til to reduserende sukkerarter, D-glukose og D-fruktose. Sukrase spiller en viktig rolle i plantenes transport og lagring og karbohydratmetabolisme. Det spiller også en viktig rolle i osmotisk regulering, motstand mot vekst og reproduksjon, og signaltransduksjon.
