Sucrase is also called “invertase”. One of the glycosidases, invertase (β-D-fructofuranoside fructohydrolase) (EC.188.8.131.52) specifically catalyzes the hydrolysis of β-D-fructofuranoside bonds in non-reducing sugars, Relatively specific. It can not only catalyze the hydrolysis of sucrose to produce glucose and fructose, but also catalyze the hydrolysis of raffinose to produce dendriose and fructose.
Function & Application
Sucrose is catalyzed by sucrase. Hydrolyzed into two reducing sugars, D-glucose and D-fructose. Sucrase plays a major role in plant transportation and storage and carbohydrate metabolism. It also plays an important role in osmotic regulation, resistance to growth and reproduction, and signal transduction.
