ブロメラインの働き

Bromelain is a cysteine protease from pineapple that hydrolyzes proteins across a broad pH range (4.5–9.5). Active during cooking (50–70°C) for controlled meat tenderization, self-inactivating above 75°C.

Used in meat tenderization, brewing chill-proofing, food processing applications, food protein hydrolysis, and dairy processing. Available in grades from 50,000 to 1,200,000 U/g.
