Invertase
Sucrase is also called “invertase”. One of the glycosidases, invertase (β-D-fructofuranoside fructohydrolase) (EC.3.2.1.26) specifically catalyzes the hydrolysis of β-D-fructofuranoside bonds in non-reducing sugars. It can not only catalyze the hydrolysis of sucrose to produce glucose and fructose, but also catalyze the hydrolysis of raffinose to produce dendriose and fructose.
Function & Application
Sucrose is catalyzed by sucrase and hydrolyzed into two reducing sugars, D-glucose and D-fructose. Sucrase plays a major role in plant transportation and storage and carbohydrate metabolism. It also plays an important role in osmotic regulation, resistance to growth and reproduction, and signal transduction.
